EDIT: Here we go. Simply way too many favorites to pick from but these are my five picks. I tried to leave out some of the ones that have already been praised and picked but still ended up with absolute must haves.
1. The starting shot that kicks off my favorite film of the era. It's a beautiful bit of scenery and silence before things get crazy. I smile every time I see it.
2. The PTS shot that I and a couple of others have envisioned as a sort of "flipped" version of the gunbarrel.
3. So many gorgeous Tosca shots to choose from but this is a favorite.
4. A cool moment set against a grandiose explosion. I love the tight action and gunfighting here.
5. One of the most intimate moments of the film. I'll never forget seeing it for the first time, jaw dropped as I genuinely thought Bond was going to die here.
Honorable mentions go to the final shot of Vesper's loveknot in the snow and the shot of Bond downing the glass of wine at Mathis' villa.

The whole Tosca sequence was well-conceived by Forster, and the use of the stage (which floats on water, an important metaphor here) is brilliant.
Have fun with this one. A very strong range of choices here.

Wonderful silhouetted shot of Bond in action, similar to Skyfall
When combined with the final notes of Vesper’s Theme, we have what could quite possibly be the most poignant final shot since OHMSS. Vesper may be gone, but she left a lasting impression on Bond. Him throwing her necklace away when he realizes it’s nothing more than a fake symbol of love is perfect. Say what you want about the rest of the film, the final couple of minutes of QOS wrapped up the Vesper storyline perfectly.
