Yes, there were only five quids in his wallet.
Because who doesn't love a good explosion wrapping up an action sequence?! In all seriousness, I'd assume with all of the oil on him and the boat, and the speed at which he crashes into the other ship, set off a reaction somehow that led to the explosion. Doesn't make a whole lot of sense, but oh well. It's like all the cars in movies that immediately detonate once the gas tank is shot: it wouldn't really happen, but it's a damn cool way to dispatch a foe.

Another favourite was running straight through the facility, and instead of placing the mines on the tanks, hiding in that little room on the opposite side from the entrance and seeing how long you could last against the endless waves of enemies!
Then of course there was the multiplayer...
And Goldfinger, too, at Auric Enterprises.
Yes I thought it a bit contrived as well, but as @Birdleson explains it does make some sense at least as opposed to some of the car explosions that have been pointed out.
If you want to point at things that blow up without reason far more gratingly...
in these criminal organisations. :)
