It’s not our shocked little Italian friend I’m afraid.

The farmer is seen towards the end of the ski chase.
4. I'm holding something close to me.
I'm seen holding the reins of a cow.
5. Something gets damaged nearby.
The farmers barn is damaged when Eric Kriegler smashes through it.
6. It's unclear exactly what I'm doing, except the obvious.
Why the farmer would have his cow outside in the snow is unclear.
7. The events of this scene will cause me some hard work.
The damage to the barn will need to be repaired by the farmer to stop his cow getting loose.
8. We don't see, but you'd have to wonder what happens next.
After Bond ski's off, do Kriegler and the farmer interact? Does he complain about the damage

Cow's are usually seen in a herd, but there are no more to be seen anywhere else.
12. Up in the air, is it a bird, is it a plane? No it's James Bond.
Bond goes soaring over head, across the barn roof and crashes shortly after. The farmer has a natural look of astonishment.

Ah, nice. I'm pretty sure you have it. I couldn't find something fitting for clue#11. A cow makes sense!
FYEO was the last Bond movie I watched but I somehow missed this guy.
