I recently started making a list of all the animals featured in the novels and films, and their purpose. Maybe you could change this thread to 'Animals in Bond films/novels' if it doesn't already exist (couldn't find one), and I'll post my current list here.

I can add just off the top of my head, that there is a stray dog in QoS. I think we see it during the montage in which Bond and Camille exit the desert.
I do keep an eye out for pigeons, as I do quite like the birds, being a big city, downtown dweller. There are flocking pigeons seen in the middle of the street during the car chase in TMWTGG.
There are several pigeons puttering about in the background as Bond opens the door to the hidden subway station, in DAD.

Barnyard animals also feature in a few movies. There is quite the collection in LALD that we see as Bond and Solitaire make their way to the double-decker bus. I think we are talking some goats along with chickens and roosters milling about in the dusty street.
Also in OP pts, during the vehicle chase, one of the enemy jeeps careens off the road scattering chickens and roosters. I've always wondered how this scene was shot, as one of the roosters seems perilously close to being hit by the jeeps left front wheel. Were they able to add the birds, after the fact, in post? Surely they wouldn't terrorize the poor creatures just to get a shot.
Quick note re Drax's attack dogs. The breed is actually Beauceron.

Don't forget Sanchez's pet iguana, both the real one and what I am sure is a prop substitute used in several scenes.
When things get a little out-of-hand and James Bond is looking to vanquish his adversary, the famous cats seem to abandon ship and save their own skins, albeit they view the impending disaster licking paws in self satisfied gloat whist they consider their escape as a serious one up on their recently deceased owner; still animals have always held a sixth sense for danger….
Skyfall is the first Bond film since LTK where Bond has been in a dangerous situation with an animal. A gap of 23 years!
In the days of old, Bond would battle tarantulas, sharks, snakes, dogs, tigers...more sharks....snakes. The komodo dragons are a welcome return to Bond being at peril from the animal kingdom. Is it that audiences are not interested in seeing Bond fighting for survival as a shark potentially devours him?
Do villains not have dangerous pets that would make suitable means to kill British agents?

Yes, I believe it was as he discarded it pretty quickly when it had served its purpose as cover. Plus, manta rays are deadly creatures as we know from the death of Steve Irwin in 2006.
I always assumed the manta ray was real, and that you could actually use one to hide under due to their placid nature. Anyway, just did a bit of research, and all links mention it being a fake disguise, so I guess we can remove that one from the list.
Oh, I am sorry. I stand corrected then. The dangers of relying on an all too fallible memory.
MANTA RAYS (will not harm you!) :)
They can be up to 25 feet in length and weight as much as 3,000 pounds.
Some types of Manta Rays engage in the process of migrating.
They can lose their protective mucus membrane if they are touched by humans.
The Manta Ray has the largest brain to body ratio of all sharks and rays on Earth.
You will very rarely find any Manta Ray in captivity due to their size. They are currently only found in four aquariums in the world. (my note: so undoubtedly the one in the Bond film was fake ...)
The average life span for a Manta Ray is 20 years.
They are very close relatives of the shark. Ironically, sharks as well as orcas are their main predators. They are also closely related to the stingray but they don’t have a stinger.
They are amazing when it comes to the acrobatics that they display.
The Manta Ray is classified as a fish. It is one of the largest and it continues to be one that we know the least about.
They don’t have a skeleton that is made from bone.
The smallest species of Manta Ray is the Mobula Diabolis. It is only about 2 feet in length.
There are myths that the Manta Ray will consume people but they are false. These are very gentle creatures that are able to get close to humans without harming them.
The Manta Ray is only surpassed in size in the marine world by sharks and whales.
