Exactly. Although it was fairly obvious in the film.
Religion IS part of her cover, it is explicitly said in the conversation. Stephanie Broadchester or whatever her alias is and Mr Beach or whatever Bond's alias is are very much in love, but Stephanie's parents (notice that Vesper herself has no living relative) are strict Catholics so for appearance's sake Stephanie and Mr Beach or whatever the name is will sleep in two separate bedrooms. This is to explain why two people in a relationship don't sleep together. This is when Bond makes that joke about religion getting in the way. He refers to Vesper's cover, not to Vesper herself. Then Vesper refers to herself when she says she will keep her door shut, so Bond shouldn't get himself any ideas. This is then that Bond makes the remark: well you're not my type anyway because you're single, referring to Vesper, not Stephanie.
Well we don't know exactly the full content of the document. Even if the Catholic family is not on it, then it's Vesper adding to the cover. In any case, it has nothing to do with Vesper being particularly religious or Catholic herself : she says her (or rather, her alter ego's) family is strict Catholic.

Don't know where you hit that from but: 1)full content is not explicitly made available to the audience in the movie and 2)Vesper mentioning a Catholic family is referring to her cover, not herself (since she herself is an orphan).
I'm simply clarifying that religion was not part of the official cover, as given by M.

Except her parents are dead. Even if they were strict Catholics they'd be dead one so no reason to appease them. Otherwise and for the record I accept @QBranch very convincing evidence that this part was not on the official cover.

She speaks of her family in present tense. Granted, Vesper could have living relatives but in context she talks of her cover.
But at this point she talks about her cover. Stephanie is going to Casino Royale, not Vesper. Not until Bond blows the cover.
They don't take questions anymore, do they? They probably know moviegoers worldwide are eager to know about Vesper's cover and have no clue what to tell them. ;)
