Very odd. They are really keeping us guessing!
I think the explanation is straight forward. The DB5 is in earlier scenes and likely destroyed (again!), and the V8 is Bond's replacement car for the rest of the film, including scenes at the beach in Italy. (Bond and Madeleine marriage and, like OHMSS, they drive off in the Aston, this time a V8????) The beach might be doubling for another country, we'll soon find out.
Sapri is for the end of the film where Bond marries at the Archimagno beach. Calling it.
"Filming, which began today, will continue tomorrow and end on September 23rd. To allow the realization of the scenes, the highway 18, between the port of Sapri and the cemetery of Acquafredda di Maratea, will be closed to traffic on both lanes, for a breathtaking pursuit, from 14 to 20.30.
The filming will also involve the railway station, the port and the "midnight channel". The approximately 200 extras selected on the spot will also take part in the film."

The other stand-in for the car chase scenes would be a stunt woman, but for a simple driving scene (DB5 entering the town) they can use normal stand-ins, and as a rule a stand-in is dressed the same as the lead actor, but hair colour/style isn't really an issue unless it's a stunt man or woman doubling for the actors in action scenes.
I just looked at the Pierce2Daniel pics, the dark haired girl is sat in the DB5, could just be Madeleine at a different, earlier point in the film.
As too the girls with the same dress and different hair colour, or the lack of logical clapperboard numbering. It's as if EON are messing with us. Keeping us guessing (and doing a damn fine job of it) as to what is actually going on. Either way, we better find out what they're up to. ;)

Surely we'll be distracted with a teaser trailer to obsess over sometime in the next couple weeks...
The singer has a Chris Cornell type voice.
It still could be,one could be the PTS, and then the couple return there later during the film.
